Cake Balls for Pop's Birthday

At least that was the plan anyway. Actually it was a little more complicated than that. These were supposed to look like golf balls.

9x13 boxed cake mix - easy enough

Crumbled in a bowl using a fork - no problem

Dump in a tub of icing...

Mix it up - yum!

Roll the mixture into little balls - so far so good...

Only I don't really know what happened after that. I melted the candy and tried to cover the balls all different kinds of ways but none worked well. Lumpy just got lumpier.

and messier.

I covered ten little large balls with fondant.

I put bumps all over them in true golf ball fashion... but by then I knew it was pointless. They look more like bird eggs than golf balls! Big bird eggs. Just shy of ostrich eggs, I think.

The plan is to tell Pop "Happy Birthday! We made extra-large golf balls so you could see them!" He is turning 70 after all.

Dontcha hate it when you have a vision in your head for how cute it's going to be???? and then DRAT!

Try Almond Bark - you can find it cheap at Walmart in the baking aisle. It's AMAZING - melts way smooth and stays smooth and you can reheat it as many times as you want/need to get it just the right runniness or thickness. It tates sooo good. It comes in Chocolate (brown) and White chocolate (white - obviously) :)

It's so much better than any of those melting chips or any kind of chocolate chips I've used which seem to get all clumpy and blechy.

Try it over ritz crackers with peanut butter sandwhiched between -dip in chocolate almond bark and you'll think you're in heaven and people will think you're a genius. :)
